Food processing has evolved from traditional to modern, reproducible techniques, improving food safety and availability while supporting the growth of the food and drink industry. However, agrifood systems now face severe challenges, including climate change, resource scarcity, fragile supply chains, conflicts, and rising inequality. These pressures threaten the ability to provide safe, healthy, and sustainable food for a growing global population.

At the same time, food insecurity persists, with over 673 million people living with hunger, while obesity and food waste highlight systemic imbalances. Agrifood systems contribute significantly to greenhouse gas emissions but also hold potential for mitigation through sustainable practices.

The path forward requires collective action across governments, industry, farmers, academia, civil society, and individuals to ensure accessible, nutritious, and environmentally sustainable diets. This convention aims to serve as a platform for knowledge-sharing and collaboration among stakeholders, addressing these critical challenges and fostering innovation in food systems.

The convention will provide a comprehensive overview of innovative processing technologies and their use to develop new or improved food products and ingredients that meet consumers increased demands for quality and safety.

It will also focus on new products, materials, and additives that have emerged as a response to current and emerging issues faced by the food industry.

Therefore, this convention will provide a platform to the participants from industry, research and educational institutions to present their work covering a wide range of topics related to the theme of Convention, which will help the participants to expand and update their knowledge.
